Chicken Adobo

Adobo is a popular Filipino dish that consist of meat, seafood marinated in a soy sauce and garlic, then cooked with bay leaves and peppercorns. It is a simple dish that packs a lot of flavor, and honestly just need to be tried to describe, so without further ado, here's my recipe for chicken adobo.

Prep Time: 50 minutes Servings: 6

Cook time: 55 minutes


Ingredients

2 lb Chicken drumsticks

2 each Bay Leaves

8 tbs Soy sauce

4 tbs White vinegar

4 cloves Garlic, crushed

1 1/2 Cups Water

2 tsp Sugar

1 1/2 tsp Peppercorn

3 tbs Cooking oil

Instructions

  1. In a bowl, combine soy sauce, vinegar, and chicken, and marinate for 50 minutes.

  2. Heat a large rondeau pan on high with cooking oil, then remove the chicken from the marinade and pat dry with a napkin, and sear on all sides until the drumsticks are brown.

  3. Turn the heat to medium, wait for it to cool, then pour the marinade in the pan, then pour the marinade in, and add the bay leaves, peppercorns and water.

  4. Bring mixture to boil, then turn the heat to low, cover, and and let it simmer for 30 minutes.

  5. Uncover, then add vinegar and sugar, and cook for 10 minutes covered.

  6. Serve hot with white rice.
