Ice Cream is the perfect dessert for not only cooling down in warm weather, but the richness and sweetness of it make it perfect for reminiscing on the nostalgia it will inevitably fill you with on a cold day. That is why I thought it would be perfect for my first food blog post. This French custard (Creme Anglaise) based ice cream is sure to hit the spot. Even though this is a vanilla based recipe, feel free to experiment with other flavors and enjoy!

Prep time: 5 mins
Cook Time: 20 mins + cooling
SERVINGS: 6

Ingredients
1 Cup Milk
1 Cup Heavy Cream
5 each Egg Yolks
1/2 Cups Sugar
1 tbs Vanilla Extract
Instructions
Combine the milk, heavy cream in a pot and simmer. When the combination has simmered, add vanilla extract and steep for 10 minutes.
While the milk and cream are simmering, combine the egg yolks and sugar in a bowl, and whisk for at least 30 seconds to properly combine.
Fill a large bowl with ice with ice, then place a smaller on top with a fine sieve.
Start simmering the milk and cream mixture again, then when it starts to simmer, vigorously whisk while slowly pouring in the egg mixture. it is important to not stop whisking while pouring the egg in.
Still continuously whisking keep simmering the mixture on low to medium heat until mixture is thick enough to coat the back of a spoon.
Strain the sauce through the sieve, then refrigerate it until it is ice cold.
Once the mixture is cooled, place in an ice cream maker according to instructions.
If you don't have an ice cream maker, whisk the mixture for 5 minutes either using a mixture or hand, then place in the freezer for 30 minutes and repeat the process until it is the consistency of ice cream. It may take 5-6 rounds.
