Sukuma Wiki is the Swahili name for collard greens. It is very popular all over East Africa, especially in Kenya where it is a staple, and is often paired with ugali/posho, which is a steamed corn dough.Unlike American style collard green, sukuma wiki is often cooked without meat or meat stock, so it is vegan and vegetarian friendly. You can also experiment with the seasonings and spices you want to use. For this recipe,I used Royco, which is a popular Kenyan seasoning mix that you can purchase on Amazon, but you can also use curry powder, bullion/maggi, or any spice/seasoning mix you choose to use. * Royco is basically seasoned cornstarch, so this recipe is not carb free, and I would advise using a different seasoning if you have a corn allergy or intolerance.


Sukuma Wiki with Ugali


Prep time: 10 minutes Servings: 1

Cook time: 15 minutes


Ingredients

1 1/2 Cups Collard Greens

1/3 Cups Diced Tomatoes

1/4 Cups Small Dice Red Onions

4 tsp Royco

5 Tsp Water

2 tsp Vegetable oil

To Taste Salt and Pepper


Instructions

  1. In large saute pan, heat the oil on medium heat.

  2. Add the onions, and sweat them until translucent, then add the tomatoes.

  3. Mix the water and royco to form a slurry, then stir it into the pan.

  4. Mix the royco well into the tomatoes and onions, and cook until it is no longer watery.

  5. Add the collard greens, and cook until everything is hot, and the greens are fork tender. Stir frequently to avoid burning at the bottom of the pan, and season as you go.

  6. Serve hot with Ugali and enjoy!
